Ingredients
- 2 1/2 cup(s) Romaine lettuce Chopped
- 15 1/2 ounce(s) Can black beans Rinsed & drained
- 3/4 cup(s) Tomato Chopped
- 3/4 cup(s) Jicama Peeled & chopped
- 3/4 cup(s) Corn Kernals Frozen or fresh
- 3/4 cup(s) Radishes Thinly sliced
- 1 Large avocado Diced
- 1 Large red pepper Chopped
- 1/4 cup(s) Feta cheese Crumbled
- Honey-lime dressing
- 1/4 cup(s) Fresh lime juice
- 2 tablespoon(s) Olive oil
- 2 tablespoon(s) Honey
- 2 tablespoon(s) Cilantro Chopped
- 1 Garlic clove Peeled& minced
- 1 teaspoon(s) Jalapeño pepper Chopped
Preparation
- Toss all salad ingredients in a large bowl. In separate bowl, mix dressing ingredients. Pour dressing over mixture and toss again. Season salt and pepper to taste.
