Mexican Chicken-Hominy Soup

    Great spice and flavor to this soup! Super easy to make. I also did not make the chips but just added some blue corn tortilla chips from the store. I added 1/8 teaspoon of cumin to the soup since I wasn't making the cumin chips. Made for a really good dinner and will make again!

    Very, very bland. We love all the ingredients in general, but this was a flop for us. It needs something more. My husband pronounced it the worst CL recipe we've ever made & we've made a lot of them over the years. We even squeezed lime into it, but it couldn't save the soup.

    Loved this soup! So easy and good. I made it gluten free by boiling chicken tender and shredding. Loved the chips too.

    It's a good recipe... it's very filling. The portion size is definitely enough for one person-- however it is lacking some flavors which is disappointing. I will try to make this recipe again and maybe adding a little bit of salt (I know, I know), or different seasonings like cumin. I did NOT make the tortilla chips to accompany them, and maybe that was part of why I felt that it was lacking flavor.

    Made this for my family on a cold rainy day and they all loved it. I baked chicken breasts that were seasoned with garlic salt and pepper and used that in my soup instead of the store-bought chicken. It added the right taste to it. It's another rainy and cold day so we're having it again tonite!

    I LOVED this soup. I made the Cumin-Lime Tortilla Chips too and they went so well together. It is very quick and easy - even the chips. My husband and i love hominy so we did add the large can, a little more than the recipie calls for, but that only gave it a thicker more stew like consistancy. This will become a regular at our house this winter.

    Might have been bland, as one rater noted, but I can never leave a soup recipe alone, so I added a bunch of spices (can't cook without cayenne for one), fresh veggies and canned tomatoes with jalapenos (drained). Loved it... and my boyfriend who was sick really liked it too. He even at the leftovers, which he never does! Loved the chips too... forces you to limit your quantity!

    I thought this soup was simple to make and delicious in flavor! I can see how some people may want more seasoning - esp. if they are used to lots of sodium in their diet - but I thought it provided enough as the recipe was written. I added some crumbled tortilla chips in mine instead of making the tortilla chips noted in the recipe - made it even simpler to make in a short period of time without taking away the crunchy texture to the dish

    This is a great, FAST recipe. It's quite filling and the flavors go well together. The only changes we made were to add some cumin and some lime juice to it (we didn't make the chips with it). A perfect weeknight meal for those chilly evenings.

    I made this soup for a quick dinner on January 1. I never follow soup recipes to the "T" in any case and did not here either. I used more jalapeno and onion than called for and sauteed those. I cut two large boneless chicken breasts into chunks and cooked them first with the jalapeno, onion and garlic and then let them cook more slowly in the stock. I also used some salt, fresh ground pepper, Monterey chicken seasoning, cilantro, and cumin and let all of that simmer with the other ingredients for 15-20 minutes before I put the hominy and also some parsley in and then let it simmer some more. It was absolutely delicious and deliciously aromatic. The kids loved it and so did I!

    I've been cooking my own version of this soup for at least ten years now. I got the recipe from my Mexican friends. However, this version is sooo easy and much more flavorful than my version. My husband and I loved it!

    Really easy to make. Like others though the original recipe was a bit bland, especially since I used the lower sodium version of Swanson broth. So for a little more flavor I added 2 chicken bouillon, a little garlic powder, a bit of cumin powder, and some Sazon with coriander and annatto. I skipped the jalapeno because I have little kids and we don't even bother with the chips since the soup is enough. We squeeze the lime into the soup which adds a good flavor. My family loves it and I love that it is lower calorie:)

    This soup was good. Not great. It was nice to have on a rainy night after a long day at work, but not really anything other than that. It was super easy to make, but tasted like that as well. Google Cafe Rio Tortilla Soup Recipe instead. It's essentially the same type of soup, but with a lot more flavor.

    I chose this recipe as an easy way to use leftover Thanksgiving turkey and my homemade turkey stock. It was a satisfying, hearty meal, although it could definitely use some jazzing up. I did top it with tortilla strips, a dollop of sour cream and a sprinkle of red chile topping in addition to the radishes, cilantro and lime juice, but it could still use something else.

    Made a huge batch of this for all of my friends when we came back from our last year of college. It was so delicious and everyone asked me for the recipe. Huge smash! Making it again tonight for my fiancee. Even my friend's mothers want this recipe. I always add sprouts on top when i serve it. Gives a little crunch and more texture to the soup. anyone who makes this recipe will be very pleased with themselves afterward. enjoy!

    This is really easy to make. Good for a quick lunch.Doesn't have a depth of flavor. The radishes add a nice touch.
