Instead of sectioning fresh grapefruit, you can substitute bottled citrus sections.
6 cups mesclun salad greens
1 cup red grapefruit sections (about 2 large)
3 tablespoons fresh grapefruit juice
2 teaspoons extra-virgin olive oil
1 teaspoon honey
1/4 teaspoon salt
1/8 teaspoon coarsely ground black pepper
1/4 cup (1 ounce) crumbled feta cheese
How to Make It
Combine mesclun and grapefruit sections in a large bowl. Combine grapefruit juice and next 4 ingredients in a small bowl, stirring with a whisk. Pour over salad; toss gently to coat. Divide evenly among plates. Sprinkle each serving with cheese.
