Mesclun Salad Dressing

Using mesclun for the dressing itself is an inventive way to get the most from an ingredient--especially if your salad greens are mesclun, too. We used all green leaves to keep the bright color.

Yield: Makes 1 cup (serving size: 3 tbsp.)

  • 1 large garlic clove, minced
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon kosher salt
  • 2 1/2 cups loosely packed mesclun (green leaves only)


  1. Blend all of the ingredients, stopping often to push greens closer to blender blades.
