Cranberries, raspberries, and strawberries make up Merry Berry Filling. Spread this festive filling between layers of your favorite white cake for impressive pops of color with each slice.
Makes 2 cups
Total time: 6 Hours, 45 Minutes
1 cup fresh cranberries
1 cup fresh raspberries
1/2 cup sugar
3 tablespoons water
2 tablespoons cornstarch
1 tablespoon cold water
1 cup chopped fresh strawberries
2 tablespoons butter
Cook first 4 ingredients in a medium saucepan over medium-low heat, stirring often, 3 to 4 minutes or until cranberries begin to pop. Whisk together cornstarch and 1 Tbsp. cold water until smooth; add to cranberry mixture, and cook, stirring constantly, 1 minute. Stir in strawberries and butter until butter is melted. Cool to room temperature (about 30 minutes). Cover and chill 6 hours.
