Melon, Mozzarella, and Prosciutto Skewers

    Perfect appetizer recipe for an al fresco summer dinner! Simple, fresh, delicious. We like to leave it out of fridge for 10 minutes so the flavors are better than chilled.

    We made this recipe for a business cocktail party and they were a hit! We used less prosciutto (about half) for each skewer so that .6 lbs made 44 skewers (as many as we had mozzarella balls). We peppered just the cheese. We used the ciliegine size mozzarella. We also used small bamboo skewers from Cost Plus that have a little handle. They looked great and tasted great! Wish I could add my picture.
