1 medium, very ripe cantaloupe (about 4 lb.), peeled, seeded, and coarsely chopped
3 cups cold water
3/4 cup simple syrup
1/2 cup lime juice (from about 3 large limes)
How to Make It
Process cantaloupe in a food processor until smooth, 30 to 40 seconds, stopping to scrape down sides as needed. Pour through a fine wire-mesh strainer into a measuring cup, stirring and pressing gently with a spatula. Discard seeds and solids.
Stir together cold water, simple syrup, lime juice, and 2 1/2 cups melon puree in a large pitcher. (Reserve any remaining melon puree for another use.) Serve over ice.
