Cut cucumber in half lengthwise; cut each half crosswise into 1/4-inch-thick slices. Combine cucumber and cantaloupe in a medium bowl.
Combine pineapple juice concentrate and remaining 3 ingredients, stirring well. Pour mixture over cantaloupe mixture; toss lightly. Cover and chill at least 1 hour. Toss lightly before serving.
