A quick and easy 5-ingredient salad can certainly save the day. This super fresh melon-cucumber dish will hit the spot as a side dish or stand alone all by itself.

Ingredients

  • 1 medium cucumber
  • 3 cups cubed cantaloupe
  • 2 tablespoons limeade concentrate, undiluted
  • 1 tablespoon water
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon chili powder

How to Make It

  1. Cut cucumber in half lengthwise; cut each half crosswise into 1/4-inch-thick slices. Combine cucumber and cantaloupe in a medium bowl.

  2. Combine limeade concentrate and remaining 3 ingredients, stirring well. Pour limeade mixture over cantaloupe mixture; toss lightly. Cover and chill thoroughly. Toss lightly before serving.
