Mediterranean Turkey Cutlets and Pasta

    We loved the turkey, but were not huge fans of the sauce. I omitted olives, since we don't like them. But the sauce was quite bland. I love the method of cooking the turkey and will try this again with a white sauce next time.

    My family loved this recipe. I may have been a little more generous with the Greek Seasoning but I love the flavor. I don't think it would be as good with Italian seasoning. It was pretty quick and I really liked this way of cooking turkey.

    I added a small can of tomato sauce b/c the sauce was too thin and a little extra of the herbs and salt to meat and sauce. After those modifications it was more flavorful and the pasta didn't soak up all the sauce.

    We LOVED this! We substituted chicken for the turkey and I only had diced tomatoes so I added olive oil, balsamic and dried basil. My kids ate it up and asked for seconds. I would probably double the "sauce" next time just to have a little more but this was a quick and easy meal to make and it will definitely go into our weekly rotation.
