Combine first 8 ingredients in a bowl; mix until combined. Divide panko mixture into 4 portions, shaping each into a 1/2-inch-thick oval patty.
Heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Add patties to pan; cook 6 minutes on each side or until done. Place 1 patty and 1/2 cup arugula in each pita half.
Tzatziki sauce: Combine 1/2 cup plain low-fat, Greek-style yogurt; 1/4 cup finely chopped seeded cucumber; 1/4 teaspoon salt; and 1/8 teaspoon ground red pepper. Serve with sliced bell pepper and celery sticks.
Have made these several times over the years and always enjoy them. Grilling the burgers on our Traeger really helps with the flavors. I didn't have yogurt so used light sour cream in the Tzatziki sauce and also added about 1/2 teaspoon of minced garlic. YUM. For us, we cut the burger in half and put each half into a pita with the greens and sauce. A bit more calories that way but it is impossible to get a whole patty into a half pita with the greens.
I've made this three times now. I think the Taziki sauce is bland, and will try to figure what it's missing for me, but otherwise it's a perfect, and perfectly easy, main course. My only change is I fry the patties in a covered pan, to avoid the mess. It comes out delicious, each time!
These burgers are easy to make and very flavorful. I didn't have arugula, so I used spinach. I also forgot my plain yogurt so I couldn't make the sauce. I used ranch instead. It was good, but I'm going to make these again and use the tzatziki sauce recommended in the recipe. Perfect light meal for hot summer days. My husband who usually goes along with me testing new dishes on him didn't want the pita and decided to eat the burger by itself dipped in the ranch. We both enjoyed them and I plan to make again..
This was absolutely delicious, with the added bonus of being quick and easy. My favorite type of recipe.I didn't use arugula, just romaine. Both the husband and the daughter loved it, although my daughter had it without the sauce. And they've both requested that I make it again next week, which I will be happy to do. Loved everything about this recipe.
I have made these three times now and they are delicious. My family also loves them. They come together easily and are really moist with a great Mediterranean taste. The last two times I cooked them on the grill, Because I don't like big hunks of meat, I made smaller patties and they were just as good. I did cook them for about 9 minutes total instead of 12 because the patties were smaller. Don't skip using the arugula, the contrast really brings out the flavor. We put some of the tzatziki sauce on the burger, too.
