Mediterranean Summer Salad

    My husband doesn't like pasta salads but he declared this one is "GREAT!" I made it exactly as written except that I rinsed the cooked orzo pasta with cold water, then drained it well before adding it to the salad, which worked very well.

    This eclectic combination is an outstanding and flavorful salad. I increased the amount of olive oil and balsamic as the amount was not enough for my taste. I served this for dinner guests and they loved it. Be sure and cool the orzo before adding to the salad.

    Great summer salad, especially with fresh tomatoes and basil from the garden. I too added more balsamic vinegar and olive oil (and used equal amounts of both). I also added a little more spinach and some shredded chicken. Great mixture of wonderful tastes and textures. I'll use this recipe often this summer!

    LOVE THIS!! I cooked the orzo first and let it cool for at least an hour. I doubled the dressing because I thought it looked a bit scant. Next time I will double the spinach also. I will serve this again and again. I also think it would be a great salad to take to a party. I served the dish with BBQ T-Bone steak. Lovely!

    I could seriously eat this one until my stomach exploded. :) Spinach & basil ended up wilting slightly from the warm orzo, but in a good way. I made too much orzo because I didn't measure. Luckily I had enough spinach, basil and tomatoes to balance out, but it definitely would've been better with the right proportion of feta! Also, had to sub almonds for pine nuts, still very good.

    This salad is so good and does make a lot. All of the flavors really blend well together. I made the salad as written and plan to make the salad many times.

    This is one of those salads that gets better the longer it sits. I doubled the Dressing and doubled the Spinach. YUMMY!!

    This salad is amazing! I agree that it gets better the longer it sits!! I do mix while the orzo is hot as this slightly wilts the spinach and makes the feta creamy.
