  • 1 tablespoon olive oil
  • 1 1/2 cups chopped onion (2 medium)
  • 5 garlic cloves, minced
  • 1 cup dried lentils
  • 1 cup long-grain brown rice
  • 1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano, undrained
  • 1/2 cup chopped kalamata olives
  • 2 tablespoons capers
  • 1/2 teaspoon salt
  • 4 cups water
  • 1/4 cup chopped fresh basil
  • 2/3 cup (2.7 ounces) crumbled reduced-fat feta cheese


  1. 1. Heat oil in a medium saucepan over medium heat. Add onion and garlic; sauté 5 minutes or until tender. Add lentils and next 6 ingredients. Bring to a boil; cover, reduce heat, and simmer 50 minutes or until rice is tender and liquid is absorbed. Spoon into individual bowls, and sprinkle evenly with basil and cheese.
