A splash of fresh lemon juice makes a quick substitute for the tomato and cheese.
1 teaspoon olive oil
2 garlic cloves, minced
1 (7-ounce) package baby spinach
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup chopped tomato
3 tablespoons crumbled feta cheese
How to Make It
Heat oil in a large nonstick skillet coated with cooking spray over medium heat. Add garlic; sauté 1 minute. Add spinach, and cook 3 to 4 minutes or just until spinach wilts. Sprinkle spinach mixture with salt and remaining ingredients, and serve immediately.
