Mediterranean Rollups
Tahini is a thick paste made of ground sesame seeds; it's found in the ethnic foods section of most grocery stores.

Ingredients
- 3 medium tomatoes
- 1 teaspoon salt
- 1 (16-ounce) can chickpeas, drained
- 1/4 cup tahini
- 6 garlic cloves
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon salt
- 4 (8-inch) flour tortillas
- 6 ounces feta cheese, crumbled
- 2 tablespoons thinly sliced fresh mint
- 1/2 teaspoon pepper
- 1/4 teaspoon paprika
Preparation
- Seed and dice tomatoes; sprinkle with 1 teaspoon salt. Let stand 1 hour in a wire-mesh strainer.
- Process chickpeas and next 5 ingredients in a food processor until smooth. Spread mixture evenly over tortillas. Sprinkle with tomato, feta, and next 3 ingredients; roll up. Chill 30 minutes. Cut each roll diagonally into 1-inch slices.
