Mediterranean Rollups

Tahini is a thick paste made of ground sesame seeds; it's found in the ethnic foods section of most grocery stores.

Ingredients

3 medium tomatoes
1 teaspoon salt
1 (16-ounce) can chickpeas, drained
1/4 cup tahini
6 garlic cloves
1/3 cup olive oil
1/4 cup lemon juice
1 teaspoon salt
4 (8-inch) flour tortillas
6 ounces feta cheese, crumbled
2 tablespoons thinly sliced fresh mint
1/2 teaspoon pepper
1/4 teaspoon paprika

Preparation

Seed and dice tomatoes; sprinkle with 1 teaspoon salt. Let stand 1 hour in a wire-mesh strainer.

Process chickpeas and next 5 ingredients in a food processor until smooth. Spread mixture evenly over tortillas. Sprinkle with tomato, feta, and next 3 ingredients; roll up. Chill 30 minutes. Cut each roll diagonally into 1-inch slices.
