Mediterranean Potato Topper

Serves 2 to 4


  • 2 to 4 sweet potatoes
  • 2 ounces feta cheese
  • 1/4 cup chopped pitted kalamata olives
  • 1/3 cup chopped oil-packed sun-dried tomatoes
  • 1 teaspoon chopped fresh oregano (or 1/4 tsp. dried)
  • Olive oil
  • Freshly ground black pepper

How to Make It

  1. Pierce sweet potatoes with a fork; bake at 400ºF for 45 minutes.

    Quiche in a Sweet Potato Crust
  2. Mix feta, olives, tomatoes and oregano. Spoon onto potatoes. Drizzle with olive oil and season with pepper.
