- 2 to 4 sweet potatoes
- 2 ounces feta cheese
- 1/4 cup chopped pitted kalamata olives
- 1/3 cup chopped oil-packed sun-dried tomatoes
- 1 teaspoon chopped fresh oregano (or 1/4 tsp. dried)
- Olive oil
- Freshly ground black pepper
How to Make It
Pierce sweet potatoes with a fork; bake at 400ºF for 45 minutes.
Mix feta, olives, tomatoes and oregano. Spoon onto potatoes. Drizzle with olive oil and season with pepper.
