Heat the oil in the bottom of a dutch oven over medium high heat. Add the onion, bell pepper, and garlic, cook stirring until softened about 8 minutes.
Add the tomatoes, tofu, water, zucchini, taco seasoning, and oregano. Bring to a boil. Reduce the heat and simmer, covered, stirring occasionally, about 20 minutes. Add the beans and simmer, partially covered, until the vegetables are well softened and the flavors are developed, about 20 minutes longer.
