Mason County Relish

Yield about 2 cups


  • 1 medium onion, chopped
  • 1 small green pepper, seeded and chopped
  • 3/4 teaspoon salt, divided
  • 2 medium tomatoes, peeled and chopped
  • 1/4 cup vinegar
  • 1 tablespoon sugar
  • 1/8 teaspoon pepper

How to Make It

  1. Combine onion, green pepper, and 1/2 teaspoon salt in a medium saucepan; add water to cover. Bring to a boil; cover and reduce heat. Simmer 10 minutes. Drain thoroughly.

  2. Combine cooked vegetables and tomatoes; mix well. Add remaining salt, vinegar, sugar, and pepper, stirring well. Cover and refrigerate at least 1 hour.
