- 1 medium onion, chopped
- 1 small green pepper, seeded and chopped
- 3/4 teaspoon salt, divided
- 2 medium tomatoes, peeled and chopped
- 1/4 cup vinegar
- 1 tablespoon sugar
- 1/8 teaspoon pepper
How to Make It
Combine onion, green pepper, and 1/2 teaspoon salt in a medium saucepan; add water to cover. Bring to a boil; cover and reduce heat. Simmer 10 minutes. Drain thoroughly.
Combine cooked vegetables and tomatoes; mix well. Add remaining salt, vinegar, sugar, and pepper, stirring well. Cover and refrigerate at least 1 hour.
