Here, the nutmeg accents the sweetness of the potatoes.
6 sweet potatoes (about 4 pounds), peeled and cut into eighths
3 tablespoons honey
1/2 cup orange juice
1/2 cup sour cream
1/4 teaspoon kosher salt
1/4 teaspoon ground nutmeg
How to Make It
Place the sweet potatoes in a large pot and add enough water to cover. Bring to a boil and cook until tender, 15 to 20 minutes. Drain the potatoes and return to the pot. Add the remaining ingredients and mash with a potato masher or fork. Season to taste with more salt if necessary.
This is a good recipe, but it is really sweet. I think next time I will omit the honey and cut the orange juice in half. However, I used a heirloom organic sweet potato variety, so you may need the extra sweetness if you are using standard grocery sweet potatoes. I also increased the salt to 1 tsp. and it definitely needed at least that much.
