Mashed Red Potatoes with Chives

Prep time 1 min
Cook time 8 mins
Yield 2 servings (serving size: about 1/2 cup)
Don't worry about peeling the red potatoes before you mash them. The skins give the mash a rustic appearance and the chives add a mild onion flavor.

Ingredients

  • 1 red potato (about 1/2 pound)
  • 1 garlic clove, minced
  • 2 tablespoons reduced-fat sour cream
  • 1 1/2 tablespoons fat-free milk
  • 1 tablespoon yogurt-based spread (such as Brummel and Brown)
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 tablespoon minced fresh chives
