Mashed Potatoes

Yield 4 servings


  • 4 medium potatoes, cleaned and peeled
  • 1 tablespoon plus 1 1/2 teaspoons butter or margarine
  • 1 teaspoon salt
  • 1/2 cup half-and-half

How to Make It

  1. Cut potatoes into quarters.

  2. Combine potatoes and boiling water to cover in a large saucepan; cook 20 minutes or until tender. Drain liquid, reserving potatoes in saucepan; add butter and salt. Mash potatoes until smooth. Add half-and-half; stir well. Serve immediately.
