Frozen precut baking potatoes give us a jump-start with these simple Mashed Potatoes that are seasoned with olive oil, salt and pepper.

- 2 tablespoons 2% reduced-fat milk

- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon salt
- Additional pepper (optional)
Preparation
- Place potatoes in a bowl. Microwave at HIGH 3 minutes, stirring after 2 minutes. Add milk, olive oil, 1/4 teaspoon freshly ground black pepper, and salt; mash potatoes. Sprinkle with additional pepper, if desired.
