How to Make It

Place potatoes in a bowl. Microwave at HIGH 3 minutes, stirring ­after 2 minutes. Add milk, olive oil, 1/4 teaspoon freshly ground black pepper, and salt; mash potatoes. Sprinkle with additional pepper, if desired.
