Mashed-Potato Cakes with Onions and Kale

    this was way to much effort for the results. It tasted good, but too much prep time and mine kind of fell apart and didn't look as pretty as the ones in the photo. Next time, I'll just make mashed potatoes and skip the making patties part...

    I have been trying out new greens (i.e. swiss chard, kale, etc), and I had a lot of kale leftover from a different recipe, so when this recipe popped up on a word search for 'kale,' I gave it a try with ingredients that I had on hand, and it turned out wonderfully. Note that I skipped the green onions and the sage to save myself a separate trip to the market, and I threw in a few other spices, and it was still quite tasty. I would definitely make this again. It looked and tasted much more gourmet than the effort it took to make them.

    This was SO good, my family really enjoyed it! I used red potatoes, dino kale and sweet onions (I used only about one whole large onion and a little extra salt)

    I thought this was a great way to use up extra kale! We had this as a side dish with scallops and asparagus and it was delicious. It did take a little while to make, so next time I might try to make the patties ahead of time for a shorter cook time. Definitely a keeper!

    I found this when i was looking for recipes to take advantage of my CSA share. I used parsley instead of sage and red onion. I thought it was delicious.

    Very yummy and I didn't think that the prep time was that bad as someone else posted but then I was preparing other dishes at the same time so I didn't really notice. I couldn't find organic Yukon or red potatoes so I used organic russet, which seemed fine. I only had enough onion for 2 1/2 cups but it didn't seem to affect the flavor at all. Would definitely make again.
