Mascarpone Mashed Potatoes

    This is a great mashed potato recipe. The end product is creamy and needs no additional flavoring like butter. The only thing is to make sure you get real Yukon Gold potatoes. The last time I made it, my store was out and I used something called "golden potatoes" with a disappointing result.
