Mascarpone Frosting

Luscious Mascarpone Frosting crowns the top of Apple-Pecan Carrot Cake.

Ingredients

  • 1 (8-oz.) container mascarpone cheese
  • 1/4 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup whipping cream

Preparation

Whisk together first 3 ingredients in a large bowl just until blended. Beat whipping cream at medium speed with an electric mixer until stiff peaks form. Gently fold into mascarpone mixture.
