Marshmallow Flower Salad with Wild Bay Dressing

Yield 6 to 8 servings


  • 1 head Red Leaf lettuce
  • 1 head Green Leaf lettuce
  • 12 brier shoots
  • 1 cucumber, peeled, cut in half, seeded and sliced
  • 1 large yellow tomato, seeded and cut into thin strips
  • Garnish: dollar weed blossoms, marshmallow flowers, thistle flowers, and wax-myrtle buds
  • Wild Bay Dressing

How to Make It

  1. Arrange the lettuce, brier shoots, cucumber, tomato, and edible blossoms on individual plates. Serve with Wild Bay Dressing.

  2. Note: One-half cup fresh bean sprouts or fresh pea shoots can be substituted for brier shoots. Any edible flower may be substituted for dollar weed blossoms, marshmallow flowers, thistle flowers, and wax myrtle buds.
