  • 1 1/2 lb peeled Yukon gold potatoes
  • 1/3 c milk
  • 3 Tbs mascarpone cheese
  • 1/2 tsp salt


  1. Cube potatoes, cover with water and bring to a boil; reduce heat and simmer 15 min or until tender. Drain, add milk, salt and cheese and mash to desired consistency.
