Marlin Chowder

Yield 5 quarts

Ingredients

  • 4 onions, chopped
  • 4 stalks celery, chopped
  • 2 green peppers, seeded and chopped
  • 4 cloves garlic, crushed
  • 1/4 cup vegetable oil
  • 4 (14 1/2-ounce) cans tomatoes, undrained and chopped
  • 1 quart water
  • 6 potatoes, peeled and cubed
  • 1/4 cup Worcestershire sauce
  • 3 tablespoons lemon juice
  • 2 teaspoons salt
  • 1 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon hot sauce
  • 2 pounds marlin fillets, cut into bite-size pieces

How to Make It

  1. Sauté onion, celery, green pepper, and crushed garlic in oil in a large Dutch oven until tender. Add tomatoes; simmer, uncovered, 40 minutes, stirring occasionally.

  2. Add remaining ingredients, except fish; simmer 1 hour or until potatoes are tender. Add fish; simmer 5 minutes or until fish flakes easily when tested with a fork.
