These are so delicious, especially if you eat them warm straight out of the oven. I didn't use any oil, used whole wheat flour (1 cup) and added a heaping teaspoon of cinnamon. Yum!!!

I have not yet tried these, but felt it important to comment: be sure to use gluten-free oat flour if you are making this for someone sensitive to gluten!!!! Also, it's a good idea to ask first if they can tolerate gf oats (not everyone with celiac can)! Otherwise this sounds wonderful :-)
