Marinated Tortellini

Yield 12 appetizer servings


  • 1 (9-ounce) package fresh cheese tortellini
  • 1/3 cup vegetable oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 clove garlic, crushed
  • 1 tablespoon chopped Italian parsley

How to Make It

  1. Cook tortellini according to package directions; drain. Rinse with cold water; drain.

  2. Whisk together vegetable oil and next 5 ingredients. Pour over tortellini; toss gently. Sprinkle with chopped parsley. Cover and chill.
