  • 4 large red or yellow tomatoes, each cut into 4 slices
  • 1/4 cup lemon juice
  • 2 tablespoons minced red onion
  • 2 tablespoons red wine vinegar
  • 1 tablespoon chopped fresh basil or 1 teaspoon dried basil
  • 1/4 teaspoon freshly ground black pepper
  • 1 garlic clove, minced
  • Green leaf lettuce leaves (optional)


  1. Arrange tomato slices in a large shallow dish. Combine lemon juice and next 5 ingredients; pour over tomato slices, turning to coat. Cover and marinate in refrigerator at least 2 hours.
  2. Arrange tomato slices evenly on 8 lettuce-lined salad plates, if desired. Spoon marinade evenly over tomato slices.
