Ingredients

4 large red or yellow tomatoes, each cut into 4 slices
1/4 cup lemon juice
2 tablespoons minced red onion
2 tablespoons red wine vinegar
1 tablespoon chopped fresh basil or 1 teaspoon dried basil
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
Green leaf lettuce leaves (optional)

Preparation

Arrange tomato slices in a large shallow dish. Combine lemon juice and next 5 ingredients; pour over tomato slices, turning to coat. Cover and marinate in refrigerator at least 2 hours.

Arrange tomato slices evenly on 8 lettuce-lined salad plates, if desired. Spoon marinade evenly over tomato slices.
