Marinated Mushrooms

Yield 16 servings


  • 1 1/2 pounds fresh mushrooms
  • 1/4 cup finely chopped celery
  • 2 cloves garlic, minced
  • 1/4 cup butter or margarine, melted
  • 1/4 cup water
  • 1 cup vinegar
  • 1 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons chopped fresh parsley
  • 2 bay leaves
  • 1 teaspoon coarsely ground black pepper
  • 1/4 teaspoon dried whole oregano

How to Make It

  1. Clean mushrooms with damp paper towels. Combine mushrooms, celery, garlic, butter, and water in a large skillet; bring to a boil. Reduce heat; cover and simmer 5 minutes. Add remaining ingredients, stirring well. Cover and simmer 3 minutes. Let cool. Marinate in refrigerator several hours or overnight. Remove mushrooms from marinade before serving.
