Marinated Lentil Salad

    This tasted like vinegar. I love the idea of a lentil salad, but it was tough to eat. I'd try it again with a fraction of the vinegar, it has potential.

    I threw this away after about 3 bites. The only reason I'm giving two stars instead of one is that I think maybe if I hadn't followed the suggestion to undercook the lentils and had just had mushy lentils, it wouldn't have been quite so bad. Plus, I need to grade on a curve because this recipe did not sound good to me when I first saw it but the reviews were great so I wanted to try it. So maybe it's me, not the recipe.

    This recipe is delicious as is. The only change I made was an accident. I only had one lemon and had doubled the recipe, so I used lime juice and leftover light Cranberry Juice to make up the difference. It is appropriate for special occasions for adventurous eaters, as these types of whole grain salads can be an acquired taste.

    Okay, there were many other 5-star reviews of this that have been erased. This is a wonderful and healthful salad. My husband loves this (he loves legumes). It is fantastic as is

    Great salad. Super easy. Had to make lentils for Shepherd's pie but only needed a half cup cooked lentils for the recipe. I used the remaining lentils to make this salad. I used half the dressing for the lentil salad and half for a green salad with shredded cheese. Dinner was a hit.
