This combination sounded a bit unusual and possibly interesting--turned out to be amazing! Something about the mix of sweet and sour with the fullness of the cheese really does it. Because I'm diabetic, we used 2t honey, instead of 2T; we also halved the olive oil. I put walnuts on top of mine to up the protein a little.
This recipe was surprisingly delicious and unusual. One key bonus is that it holds and stores quite well over more than a day. We had it in the refrigerator for two days and it was still fresh. This is a good salad for those with trying schedules. Tossed salads not consumed the same day do not hold well. This one does.
I like the idea of the walnuts. My wife suggested some dried fruit such as cranberries or golden raisins.
This is a keeper.
