Marinated English Cucumber and Onions

If marinating overnight, slice the cucumber a bit thicker so it retains some crunch.

Ingredients

  • 1/3 cup rice vinegar
  • 2 tablespoons chopped fresh mint
  • 1 1/2 tablespoons sugar
  • 1 1/2 teaspoons honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 3 cups (1/4-inch-thick) slices English cucumber
  • 1 cup vertically sliced Vidalia or other sweet onion

Preparation

1. Combine first 6 ingredients in a large bowl, stirring until sugar dissolves. Add sliced cucumber and onion, and toss well. Cover and refrigerate at least 3 hours, tossing occasionally.
