  • 1 stick(s) Butter
  • 1/2 Onion Diced
  • 1 tablespoon(s) Garlic Minced
  • 1/2 stalk(s) Celery Diced
  • 1 cup(s) Crushed Italian Tomatoes
  • 1/2 cup(s) Flour
  • 1/4 cup(s) Sherry
  • 1 cup(s) white wine
  • 2 cup(s) heavy cream
  • 1 quart(s) Milk
  • 2 ounce(s) Scallops
  • 4 ounce(s) Baby Shrimp
  • 2 ounce(s) Crawfish Tails
  • 2 ounce(s) Lump Crab Meat
  • 1 cup(s) Clams With Juice
  • 10 ounce(s) Fish Diced
  • 1 teaspoon(s) Lemon Juice
  • 1/2 bunch(es) Green onions Chopped1
  • 1 teaspoon(s) paprika
  • 2 tablespoon(s) Basil
  • 1 S& P to taste
  • 1 Cayenne to taste

Preparation

  1. Melt butter in a heavy saucepan. Sauté onions, garlic , celery & tomatoes for 10 minutes. Stir in flour until all is incorporated. Slowly add sherry, white wine, cream & milk , stirring continually. Bring to a slow boil . Add all seafood, lemon juice ,green onions and paprika. Bring back to a slow boil. Simmer 20-30 minutes. Add basil and to taste -salt, pepper, and cayenne.
