    These are perfect. I would recommend using the exact recipe without any substitutions. Every ingredient - the lime zest, the course salt, lime sherbet mixed with vanilla ice cream, etc..should not be omitted.

    These sandwiches were really tasty. The sugar cookies are deliciously sweet and salty on their own but the sherbert ice cream addition makes them even better. Tangy, sweet, salty- these have everything!

    This dessert sounded better than it turned out. The cookies were the best part and would be better eaten with a hot cup of tea. However, the frozen result was extremely hard to bite into and in the end, not as much flavor as expected. There are much better frozen dessert recipes out there that are much less time consuming and better tasting. I won't make this one again, but it was fun to try. I gave it two stars because I think the dessert has potential (like eliminating the vanilla ice cream as it took too much of the lime flavor away) but I don't like it enough to experiment.

    Great! I disagree with other reviewers who thought the cookie part was too tough, mine were just right. Great for a small dessert fix. I will definitely use this recipe as a base for other flavor combinations! Give it a try!!

    These were a huge hit at a recent party. I made them "mini" ice cream sandwiches since it was for a large crowd. The cookie dough was way too tough especially the 1st batch. Beat the 2nd batch of sugar and butter for at least 20 minutes to get it light and fluffy. I will make them again but I will modify the recipe for a soft cookie. Also the lime sorbet was not green so instead I lightly coloured coarse sugar to sprinkle on top before baking the cookies.
