    Worthy of a Special Occasion

    My husband and I love this dish. Easy to make and very tasty. I always add the pork to the dish to make it a "main dish". I've made it with frozen corn and it was just as good. I only use half a jalapeno as a whole one is a bit too spicy for our taste.

    This recipe was awesome and I even made it easier on myself. However, I did change it a little. I cooked 2 pieces of bacon in the skillet, removed and used the bacon grease as my oil. I also added a couple cloves of garlic. I used frozen corn as well. I crumbled the bacon over top at the end. It was delicious.

    Did I do something wrong? I used fresh tomatoes from my garden (and peppers) and they are good in other recipes I make, so I don't think it's my vegetables. It was okay. My husband thought it was good, but that wasn't said with any emphasis. I just didn't find it to be anything special and I generally enjoy about 80% of these recipes...
