Ingredients

  • 2 tablespoons shortening
  • 1 medium onion, coarsely chopped
  • 1/2 cup chopped green pepper
  • 12 ears fresh corn, cleaned and kernels cut from cob
  • 1 cup chopped tomatoes
  • 1/4 cup milk
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon sugar
  • 1/8 teaspoon pepper
  • Dash of red pepper
  • 1 tablespoon butter or margarine

How to Make It

  1. Melt shortening in a large Dutch oven. Add onion and green pepper; sauté until tender. Add corn, tomatoes, milk, salt, sugar, and pepper. Cook, uncovered, over medium heat 30 minutes, stirring frequently. Stir in butter before serving.
