These fresh-flavored mango shrimp skewers are a great option for entertaining.
1 1/2 pounds large peeled and deveined shrimp
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 large red bell peppers, cut into 1-inch pieces
2 mangoes, peeled and cut into 1-inch cubes
1 small red onion, cut into 1-inch pieces
2 limes, cut into wedges
How to Make It
Prepare grill to medium-high heat. Sprinkle shrimp evenly with salt and black pepper. Thread shrimp, bell pepper pieces, mango cubes, and onion pieces alternately onto each of 8 (12-inch) skewers. Place skewers on a grill rack coated with cooking spray; grill 2 minutes on each side or until shrimp are done. Squeeze juice from lime wedges over kebabs.

These were great! Was surprised how just the salt and pepper seasoning worked for the whole recipe just fine - really let the flavor of the shrimp shine after the hit of lime. The mango and red onion were a nice juxtaposition! Had larger/jumbo shrimp so they needed about 3-4 min. a side rather than just the 2. Used as main course over quinoa/veggie mix. Would probably stick with a rice next time as the quinoa was a little earthy for the bright flavors in the kebabs. Not much of a "recipe" per se, but will definitely make again and keep the basic ideas in mind (i.e. mango/lime).
My husband loved it. However, I cooked the skewers for about 6 minutes (instead of the indicated 4) and the shrimp were still quite undercooked. I was also worried they would be dry so after i salted and peppered the shrimp and put everything together, i drizzled olive oil on top. I love the way the mango and onion taste together. I served this over brown rice with grilled squash and zucchini. I would also put some cherry tomatoes on the skewers in the future simply because my husband likes these.
