Mango Bread
Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 3 large eggs, lightly beaten
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups chopped mango
- 1/2 cup raisins
- 1/2 cup sweetened flaked coconut
- 1/2 cup chopped walnuts
Preparation
- Stir together first 5 ingredients in a large bowl.
- Whisk together eggs, oil, and vanilla; gradually add egg mixture to flour mixture, stirring just until moistened. Stir in mango and remaining ingredients. Pour mango mixture evenly into 2 lightly greased 8- x 4-inch loaf pans.
- Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out clean. Cool completely.
