Mamma Mia Italian Stew

This stew is chock-full of flavorful summer produce with a hint of heat from hot Italian sausage.

Yield: Serves 8 to 10


  • 1 pound hot Italian sausage, cooked and drained
  • 1 eggplant, peeled and cubed
  • 1 1/2 cups sliced green beans
  • 2 green peppers, sliced
  • 1 to 2 potatoes, peeled and cubed
  • 1 zucchini, cubed
  • 1 yellow squash, cubed
  • 1 cup onion, thinly sliced
  • 15-oz. can Italian-style tomato sauce
  • 1/4 cup olive oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon salt


  1. Combine all ingredients in a 7-quart slow cooker; stir well. Cover and cook on low setting 8 hours or on high setting 4 hours.
