This stew is chock-full of flavorful summer produce with a hint of heat from hot Italian sausage.
Serves 8 to 10
1 pound hot Italian sausage, cooked and drained
1 eggplant, peeled and cubed
1 1/2 cups sliced green beans
2 green peppers, sliced
1 to 2 potatoes, peeled and cubed
1 zucchini, cubed
1 yellow squash, cubed
1 cup onion, thinly sliced
15-oz. can Italian-style tomato sauce
1/4 cup olive oil
2 teaspoons garlic, minced
1 teaspoon salt
Combine all ingredients in a 7-quart slow cooker; stir well. Cover and cook on low setting 8 hours or on high setting 4 hours.
