- 3 1/2 pounds red potatoes, cut into 1/2-inch cubes
- 8 hard-cooked eggs, coarsely chopped
- 1/4 cup minced celery
- 1/4 cup finely chopped green onions
- 2 tablespoons chopped Italian parsley
- 1 1/2 teaspoons salt
- 1/4 teaspoon freshly ground pepper
- Homemade Mayonnaise
How to Make It
Boil potatoes in salted water to cover 10 minutes or until tender; drain and cool. Combine potatoes and remaining ingredients in a large bowl; toss gently.
Note: You may substitute prepared mayonnaise.
