Mama's Wet Potato Salad

Yield 10 servings


  • 3 1/2 pounds red potatoes, cut into 1/2-inch cubes
  • 8 hard-cooked eggs, coarsely chopped
  • 1/4 cup minced celery
  • 1/4 cup finely chopped green onions
  • 2 tablespoons chopped Italian parsley
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon freshly ground pepper
  • Homemade Mayonnaise

How to Make It

  1. Boil potatoes in salted water to cover 10 minutes or until tender; drain and cool. Combine potatoes and remaining ingredients in a large bowl; toss gently.

  2. Note: You may substitute prepared mayonnaise.
