Mama's Corn Bread

This recipe goes with Mama's Corn Bread Dressing

Ingredients

  • 1 3/4 cups yellow cornmeal
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup 1% low-fat buttermilk
  • 1 cup water
  • 1 large egg
  • 1 large egg white
  • Cooking spray
  • 3 tablespoons vegetable oil

Preparation

Preheat oven to 375°.

Combine first 8 ingredients in a large bowl; stir well. Coat a 9-inch cast-iron skillet with cooking spray; add the oil, and place in oven for 5 minutes. Remove from oven; stir oil into batter. Pour batter into pan. Bake at 375° for 35 minutes or until golden.
