Mad Garlicky Caesar Dressing

The elegant, almost slippery texture of the Mad Delicious Aioli becomes romaine-friendly perfection with more garlic and fresh lemon. It's gentler on greens, too, so now you can take your cravings for Caesar to more tender greens, like Bibb or baby arugula, without wilting them to mulch. And don't restrain this edition. Smear a tablespoon on a plate under sliced grilled meats, and then revel in the cheers of a meal well made.


  • 1/2 cup Mad Delicious Aioli
  • 2 tablespoons grated (1/4 ounce) fresh Parmesan
  • 2 tablespoons warm water (100° to 110°)
  • 2 garlic cloves, finely grated
  • about 1 tablespoon fresh lemon juice
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon kosher salt

How to Make It

  1. In a chilled mixing bowl, combine the aioli, the Parmesan, 2 tablespoons of warm water, and the garlic, using a rubber spatula or favorite wooden spoon. It's Caesar. Go old school.

  2. Add the lemon juice progressively, not all at once. (Depending on the source and the season, lemons not only differ in size and the amount of juice inside, but also intensity.) Taste progressively, too. When you have a perfect balance of nutty Parmesan, pungent garlic, acid, and an almost-there salt level, it's right. And, it's up to you. Trust yourself.

  3. Season with pepper and salt. Stir.

  4. Chill, covered, until ready to serve.
