Macerated Peaches with Ancho-Cinnamon Sugar

Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon thinly sliced fresh mint
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ancho chile powder
  • 1 teaspoon honey
  • Pinch of kosher salt
  • 2 teaspoons lime zest
  • 2 tablespoons fresh lime juice
  • 2 pounds fresh peaches, unpeeled and quartered

Preparation

  1. Stir together first 9 ingredients in a large bowl. Add peaches; toss gently to coat. Cover and chill 1 hour.
